Serious allergies demand two things from staff: relentless prevention and a fast, correct response when prevention fails. This course covers the 14 major food allergens and non-food triggers, how to read labels and avoid cross-contamination when preparing food, and the factors that make a reaction more likely to become severe.

It then covers anaphylaxis itself — recognition, positioning, and confident use of adrenaline auto-injectors such as EpiPen and Jext.
