What this course covers
- Apply the 4 Cs of food hygiene and explain the legal responsibilities of a food handler.
- Identify the main sources of contamination and food poisoning, and apply personal hygiene, cleaning and pest control measures that prevent them.
- Control food safety at every stage — receipt, storage, preparation, cooking, cooling, reheating and thawing — using correct temperatures.
- Recognise the major food allergens and handle allergen information safely when preparing food for young people.
